Peanut Butter Brownie Truffle

 
1 fudge brownie mix (13-inch x 9-inch pan size)
2 packages (13 ounces each) miniature peanut butter cups
4 cups cold 2% milk
2 packages (5.1 ounces each) instant vanilla pudding mix
1 cup creamy peanut butter
4 teaspoons vanilla extract
2 cartons (8 ounces each) frozen whipped topping, thawed

Prepare brownie batter according to package directions. Bake in a greased 13-in. x 9-in. baking pan at 350° for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not over bake). Cool on a wire rack; cut into 3/4-in. pieces. Cut peanut butter cups in half; set aside 1/3 cup for garnish. In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick). Add peanut butter and vanilla; mix well. Fold in 1-1/2 cartons whipped topping. Place a third of the brownies in a 5-qt. glass bowl; top with a third of the remaining peanut butter cups. Spoon a third of the pudding mixture over the top. Repeat layers twice. Cover with remaining whipped topping; garnish with reserved peanut butter cups. Refrigerate until chilled.

Brown Sugar and Toffee Apple Dip

Four simple ingredients, mixed using a blender and served with green apples.  What's not to love??

  • 3/4 cup packed brown sugar
  • 1 package Heath Toffee chips (add as desired)
  • 1 teaspoon vanilla extract

    The wedding of Mark and Tina

    Normally, I don't photograph weddings. It's a big job. BIG. No re-do's or second chances. You got one chance to get the shot, and you better be on your game. STRESS. But once in a while, I push myself. And when a good friend asked me to take pictures of their wedding, I knew them well enough to know that I would be given the creative license to have FUN, and forgiveness in case things went awry...
    This is my friend, Tina.  Her sister helped her get ready for the event...
    And this is Max, Tina's son...

    These lovelies are Mark and his four children, Izzy, Gabi, Bianca and Mark Anthony, accompanied by their dad and our dear friend, Mark.  Mark is my husband's best friend, and was the best man in our wedding seventeen years ago.
    They took a moment to say a prayer in a no-peek opportunity, right before the ceremony.


     An outdoor wedding always presents itself with opportunities, right?  Like an overhead airplane that made everyone pause for a moment.  I snapped the shot, and was so tickled to have captured it.
    It was a beautiful, small, and personal joining of two families.
    My dear friend Amy Cochran grabbed the above shot and also the shot below.  SO thankful for her help that evening.  You really do need two people to shoot a wedding, to be able to get the different perspectives.  I owe you, girl!!
     We went to a nearby covered bridge for the portraits.  And the blending of their two families lent itself to a lot of fun...
