The Best Apple Cake Ever!!!

I'm starting to see leaves fall and change color, and you know what that means!!!

FALL!!!!

I love Fall. Love it! And one of my most favorite things about Fall is the all the appley goodness that comes our way. I got just a few in my weekly farm share, so I'm sure there will be a day where Farmer Taylor invites people to come pick apples. I can't wait!!

But what can you do with all of those apples, you ask?
BAKE!

My favorite recipe of all time is my mother's apple cake. It is super easy to make and impossible to resist. I hope all of you enjoy it!



Applecake

3 cups all-purpose flour
1 cup oil (I use canola)
2 1/2 cups sugar
1/2 cup orange juice (you won't taste it)
3 tsp baking powder
3 medium apples, sliced (I use granny smith)
1 1/2 tsp salt
4 eggs (or 1 cup egg beaters)
cinnamon to taste
powdered sugar for garnish (optional)

Preheat oven to 350 degrees F. Mix all but apples and cinnamon until smooth. Sprinkle sliced apples with cinnamon and add to the batter. Mix enough to cover apples. Pour into a greased bundt pan and bake for one hour or until a knife inserted into the center comes out clean. Once cooled, sprinkle with powdered sugar or serve plain.

  5. this is a great cake and it freezes well. my parents make it and then freeze individual slices for later

  6. OOH! we just went apple picking the other day and I have a bazillion apples! i made apple crisp, but wasn't sure what else to make..I'm SO going to try this recipe. Thanks!
