Roasted Red Skinned Potatoes

We love these so much, I make them at least twice a week...

Roasted Red Skinned Potatoes



1-3 lbs. Red Skinned Potatoes, cleaned and cubed

1/4 C. olive oil

Salt and Pepper

Rosemary



Line a cookie sheet with foil, and create a single layer of potatoes. Add salt, pepper & chopped rosemary. Coat with olive oil and toss, making sure that the potatoes are coated.



Bake at 400 degrees and bake for 40 minutes, making sure to stir and re-coat the potatoes half way through. You'll know when they're done when they're fork tender. Completely divine!!
