Ebelskivers (Stuffed Pancakes)

I'm a bit of a snob when it comes to kitchen stuff. I like quality, and I spend a lot of time in the kitchen, so I pouted the day after Christmas when I was shopping at Williams-Sonoma and their Ebelskiver pan was sold out. I was further disappointed when they told me that they were hard to find, so they probably wouldn't get them in stock for weeks.

The friend (Jen) I was with reminded me that I was a kitchen snob, and laughed at me. It's what we do.

Last Wednesday Jen and I met up and she handed me the ebelskiver pan pictured above. She scored it at Target--and it was only $10!!!

We tried out this simple Rachael Ray recipe using chunky applesauce, and it was delish. Our kids loved them, and couldn't tell I used the Target version (wink).

Now if only the Pioneer Woman could get on the bandwagon and whip some more recipes up, I'd be euphoric.

girl i have that too!!!! i have made brownie balls in t too!! we like our pancake balls (as the kids call them) with just powdered sugar.

$10 at Target and it works-YIPEE off to Target I go-thanks for sharing. Now keep up posted on those recipes-my kids are gonna love love you!

Oh now I totally need one of these! I've seen them on TV and didn't "think" I needed one til now! LOL!

oh man! such memories. we had those in a quaint bed and breakfast in so. cal years ago and have never fogotten how fabulous they tasted. i'm a bit envious here.

I grew up eating ebelskivers with butter and applesauce. yumm!! The funny thing is when we were in Denmark we couldn't find them; they serve them from a walk up window in Solvang, CA.
