Summer Recipe

You may remember this post from last year…


I made this mini to hold my summer recipes, and today I want to share with you what I recently added to it. It’s Jimmy’s Favorite Garlic Bread. This tasty tid-bit is based on a recipe from Guy Fieri. I modified it down as the garlic he originally had going with this garlic bread would have made for way too much for my kiddos. This bread is so yummy with anything you might be grilling.


So here ya go…enjoy!

Jimmy’s Favorite Garlic Bread

GARLIC BUTTER:
1 cup butter, softened
2 T Parmesan cheese
1 t garlic, crushed
1 t Italian seasoning
1 t fresh chopped parsley

TOMATO BASIL SALSA:
¼ C extra-virgin olive oil
1 T minced garlic
2 cups chopped Roma tomatoes
3 T basil, cut into strips
½ t sea salt
½ cracked black pepper

BREAD:
1 sourdough bread loaf cut in half lengthwise
2 T grated Parmesan cheese

1. Prepare Garlic Butter: combine butter, parmesan, garlic, Italian seasoning, parsley.
2. Spread Garlic Butter over bread. Bake at 350 for 20 minutes, until browned.
3. While bread is baking, prepare Basil Salsa: In a medium-size sauté pan over medium heat. combine oil and garlic. Cook until lightly browned, about 2 minutes. Add tomatoes and heat through. Stir in basil, salt and pepper and remove heat.
4. After baking bread for 20 minutes, top with tomato salsa, and Parmesan cheese.
5. Slice into pieces and serve.
