For Diane & Beth

Chocolate Covered Popcorn

1 bag chocolate wafers (I use whatever color--depending on holiday!)
2 bags of popped microwave popcorn, cooled
2 cups holiday colored m&m's

Pop popcorn and set aside to cool off. (If you don't and you coat it when the popcorn is hot, you'll have a big wet mess!) Next, melt the chocolate wafers in the microwave, stirring every 30 seconds or so, as to not burn the chocolate. Then pour the chocolate over the popcorn and stir to coat it all well. Now, if you really want to get crazy, add a few m&m's that are also in holiday colors now, to add more color to the mix (optional!) Pour the coated popcorn onto cookie sheets that are lined with wax paper, and chill in the frig for about 30 minutes. Take out, break into pieces, and bag in an air tight bag to seal freshness.

*You can easily add two or more colors, just be sure to chill after each color before adding the next one.

I know it doesn't sound that great, but I promise you, this stuff is totally addictive!

(And for a picture of the popcorn in a decorative Martha Stewart Bag, I posted a photo of it before on October 22, and you can see it here.)

Happy Monday to you!
